Steps

  1. Choose a dish you love eating that feeds four to six and reheats well.
  2. Cook it from a trusted recipe the first time and note what you would change.
  3. Cook it again within two weeks, adjusting salt, acid such as lemon or vinegar, and heat.
  4. Cook it a third time, mostly from memory.
  5. Write your version on a card: ingredients for four, key steps and timings.
  6. Learn one side and one make-ahead dessert that go with it.
  7. Serve it to friends; the best version is the one you can make calmly.
